I don’t know about you, but I feel that bacon makes everything taste better. I love bacon! I can’t always do bacon, due to my corn allergy. Sometimes even if the pig eats corn and then I eat that bacon that came from that pig, I break out. It isn’t all the time, just sometimes (but it is worth it, to me at least). I love making these, they are pretty easy and go fast if you have help.
Things you need:
- Cheddar Cheese, shredded (8oz)
- Cream Cheese (8oz)
- Baking sheet (preferably one that is shallow or has some kind of depth, for the fat.)
- Gloves (optional)
I included gloves, because there was one time where I didn’t use gloves when I made these and I touched my eye about an hour later… and it didn’t feel so good. Quick side note: If you do end up touching your eye after you have messed with jalapeños, grab some steaming hot water and put in a bowl (or cup). Don’t fill it up all the way though. Hold your face right above it, or rest on it if you can, and let the steam go into your eyes. It will take a couple minutes for it to help, but this is what I do and it helps a whole lot.
Preheat oven to 350 degrees or higher. Combine the cheeses, we put the cream cheese in the microwave for about a minute so it was soft enough to mix with the shredded cheese. Cut your jalapeños in half, and use a spoon to gut them. If you like them extra spicy leave some seeds. Fill the halves with your cheese mixture, and wrap them with bacon. I cut the bacon in half for smaller jalapeños, mainly because I had too many jalapeños and not enough bacon. When wrapping them stick them with the toothpicks so the bacon doesn’t slide off.
Place them on the sheet and stick them in the oven. I normally have them in for about an hour at 350. Just leave them in there long enough to have the bacon as crispy (or not crispy) as you would like. If you want them to cook faster, turn up the heat. Just make sure to keep an eye on those delicious pieces of yummy. I check them every 20 min and adjust accordingly.
I forgot to take a photo before we started eating them… that is how much we love these! So good! I normally have a little bit of my cheese mixture left, I used it to put on crackers. I normally use cheddar, but this time all we had was colby jack, and I really didn’t want to go to the store. They turned out just fine.
