So you know how I made those Chocolate Cupcakes with Peppermint Buttercream Frosting? I took them to a whole new level. Well, I guess I could say Chris did since he was the first one to actually put these together. We added Coffee Ice Cream to the mix and oh. my. goodness! Delicious!
You see what had happened was… when my parents were here my mom bought the mini Haguen Das Coffee Ice Cream tubs, and it had been so long since I’ve had it I ate a whole one within a minute. No shame, it was super yummy and we had to buy a big tub of it because Chris did the same thing. When I originally made the cupcakes I left the left over batter for Chris to eat, which he then added half a baked cupcake and some coffee ice cream. So good! I could only eat one bite of that though, because it was so rich. But Chris absolutely loved it, it also helps that he loves chocolate. That was how we made this delicious concoction.
First you simply mash a cupcake in a small bowl.
Then you put two scoops of coffee ice cream on top and you are done! Simple as pie, well pie isn’t simple but you get the point.
