I know I am a tad bit late, since Thanksgiving was almost a month ago. If you are anything like me I have leftovers in the freezer. We had so much turkey left over I couldn’t force myself to throw it away. A couple days after Thanksgiving we decided to make Turkey Tacos. I took some of the turkey and shredded it, mixed it with some taco seasoning and squeezed a lime on top and we were golden. We added our toppings and dinner was ready.
I made hard shelled tacos with our flour tortillas. Three of them made it out of the oven that were able to be stuffed, the other ones I just broke up and made them in nachos. All I care about is the crunchy part since I can’t eat corn chips.
They turned out to be really good, never thought about doing turkey tacos before. It was nice to break up the thanksgiving flavors and do something kind of normal. Something simple and easy to make after the big meal. I was so tired of being in the kitchen I didn’t want to cook at all for about a week after Thanksgiving. That is what I liked the most about doing these. Nice to be out of the kitchen and changing up the way I do turkey.
