This holiday season I made some wonderful chocolate cupcakes with a peppermint buttercream frosting. I didn’t want to make just regular buttercream icing so I searched and searched for a recipe for an icing recipe that called for peppermint extract rather than oil, since that is what I had on hand.
Here is the recipe I used from Glorious Treats that I used for the cupcakes. The only edit I made is that I used coconut oil instead of vegetable oil. Mainly because I don’t use vegetable oil and two I like the coconut and chocolate combination so I figured why not.
For the icing this is what I used:
1/4 C. Butter
2 1/2 C. Powdered Sugar
3 Tbls. Milk
1/2 tsp. Peppermint Extract
Mix all ingredients together until smooth. Then spread on cupcakes.
I’m not a big chocolate person but my goodness these are tasty! If you get a chance I would definitely say that you should try it with coconut oil. I managed to not be able to ice the cupcakes very well but a couple of them turned out pretty good. I filled some of the cupcake cups a little too much so some overfilled. But that didn’t make them less yummy. Ugly cupcakes need love too, and we gave them plenty of love.
