I have been making a lot of banana bread recently. I love taking it to work for breakfast. One time we ran out of eggs, and I really didn’t want to go to the store. I was conveniently talking to my mom about it and she mentioned Flax Seed Meal. Which I have in my cabinet for that once in a blue moon smoothie I make. The flax seed equivalent to one egg is 1 Tablespoon of ground flax seed soaked in 3 Tablespoons of water for about 5 minutes before mixing in the batter.
I use this recipe from Simply Recipes sometimes I add another banana if I have an extra on hand. You can also add walnuts if you really wanted to. The best thing about this recipe is that because of the flax seed it adds fiber and omega 3’s, which heaven only knows I need more of both of those!
Make sure to butter your bread pan so when it is done cooking, the bread slides out easy.
Simply follow the recipe (you pretty much mix everything together and pour it into the bread pan).
