All last week I was wanting to make some cinnamon rolls, but I could never justify the time that I needed to be in the kitchen vs. the need to eat them. I did some searching and found a recipe from Tastes Better From Scratch for a Cinnamon Roll Cake. The only changes I really did was with the milk, I used almond milk and then corn free products that I normally have on hand.
These are the ingredients for the cake mix. Flour, sugar, melted butter, milk (I used Almond Milk), vanilla extract, salt, 1 egg, and baking powder. Mixed them together and poured it into my 8×8 pan.
Then there is the Cinnamon mixture. It is cinnamon, brown sugar, flour and butter. Mixed those together and dropped one spoonful at a time into the batter.
I just took a butter knife and made pretty swirls into it. The bottom could have had a little bit more loving with the cinnamon mixture but that’s okay.
Cooked the sucker and then put some powdered sugar on top. The original recipe is here. I ended up not doing the cream cheese icing. This is me being the ultimate lazy person because I didn’t even want to make the icing. I think there is a trend here with me and cinnamon rolls. It wouldn’t have taken that long to make the icing, but I didn’t have any cream cheese on hand.
I should have called this “The Lazy Cinnamon Roll”, because let’s be honest here… I did as little as possible to get my cinnamon roll haha. Sure did come out delicious though!
